Well, I hope your mouth is not watering for the fish and shrimps, the Zucchini we would be making today is seen in the picture below, and will be without the fish and shrimps, since it's for the VEGAN DINNER challenge. (Sorry). You can use half of a plantain as a substitute for the potato if you wish.
Zucchini (aka courgettes)
Bell pepper Sweet potato
Spices of choice (i used garlic powder, curry, coriander, stock cubes)
Scotch bonnet pepper(hot pepper)
1 Wash zucchini, cut off edges, and spiralize
3. Peel, the potatoes,and slice into a bowl. Line a baking pan with 1tbsp of olive oil and place the diced potatoes in it. Oven grill at 250 degrees for about 12-15 minutes.
12-15 minutes later...
4. Wash and slice all extra vegetables. ( I used just 1 scotch bonnet pepper, and I did not slice my carrots, because I don't like them steamed and soft. I like to chew them while eating or as dessert, but you can add them if you like).
5. Place a non stick pan on a lit burner, add the sliced vegetables, and spices. Add 1/4 cup of water, Steam and stir till vegetables are dry, and slightly but not thoroughly cooked, as the rest of the cooking should be done with the Zoodles.
6. Add your zoodles to the steaming vegetables. Steam and stir for about 2 to 3 minutes or until cooked to your taste. Note that vegetables shrink when overcooked.
7, Serve in a plate and add the baked potatoes and carrot. Food is served
